Easy 5 minute Acai Bowl (Vegan, Gluten Free)

A long, long time ago, there lived a young girl who had just recently graduated from college and didn’t know what the frick to do with her life. So, she packed her bags and landed in Oahu. Little did she know, survival there meant working not one, not two, but a whopping eight jobs just to keep the lights on.

Guess what? Yep, that gal's me, Rachel! This crazy stint in Hawaii? Short but oh-so-meaningful, especially for my cooking journey. Among those eight gigs, two had me slinging acai, and that's where this recipe comes in—a favorite brekkie or midnight snack.

Give it a whirl! Back when rent was a struggle, this acai treat was a lifesaver. Delicious, and bonus, good for ya!

Ingredients

  • 1 packet unsweetened frozen acai packet - I love the Sambazon brand but I’ve also used the Trader Joe’s brand in a pinch and that one is decent.

  • 1 frozen banana - pro tip: chop them before freezing so it’s easier to blend

  • 1/2 cup of coconut milk or any non-dairy milk

  • top with gluten free granola, fresh berries, agave, chia seeds

Instructions

  1. Blend. In a high-powered blender, I use ninja but Vitamix or KitchenAid are also great, combine the packet of frozen acai, the frozen banana, and the coconut milk or non-dairy milk. Add more milk if the blender is unable to blend smoothly, but the goal is to make it as frozen as possible for an icecream consistency.

  2. Serve. Pour the acai into a bowl and top with your favorite toppings. So much nom!
